Cuisine American
- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup rolled oats
- 1/2 cup gluten free flour All Purpose works as well
- 1 tsp vanilla extract
- 1 tbsp honey or maple syrup optional for sweetness
- 1 tsp baking powder
- A pinch of salt
- Butter or oil for cooking
Blend the Ingredients:
Add the cottage cheese, eggs, oats, flour, vanilla extract, honey or maple syrup (if using), baking powder, and salt to a blender.
Blend on high until the mixture is smooth and creamy, about 1-2 minutes. The batter will be thick, but still pourable.
Cook the Pancakes:
Pour the batter straight from the blender onto the hot skillet, using about 1/4 cup of batter for each pancake. Spread slightly if needed, as the batter is thick.
Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes. Flip and cook the other side until golden brown, another 2-3 minutes.
- If you prefer thinner pancakes, add a little more milk to the batter until it reaches your desired consistency.
- For a fun twist, try adding blueberries or chocolate chips to the batter before cooking.
Enjoy your fluffy, protein-packed oatmeal cottage cheese pancakes!
