Why I Love These Oatmeal Cottage Cheese Pancakes for My Family

As a mom, I’m always on the hunt for meals that are both nutritious and easy to make. These pancakes hit the mark perfectly. They’re packed with protein from the cottage cheese and eggs, fiber from the rolled oats, and they’re made with whole, simple ingredients that make me feel good about serving them to my family.

Not only are they healthy, but they also come together quickly. On busy mornings when I’m trying to get everyone out the door, I can whip up a batch in minutes. Just toss everything into the blender, pour the batter onto the skillet, and breakfast is served! I will note that you need a good blender to make the batter smooth. Here is the one I have and love!

The Perfect Make-Ahead Breakfast

One of the best things about these pancakes is how well they freeze. I love making a double batch over the weekend, freezing the extras, and then reheating them during the week. A stack of three can be microwaved for about one minute, and they’re ready to go—perfect for those chaotic school mornings when time is tight.

A Note on Texture

I should mention that these pancakes aren’t like your traditional fluffy ones. They have a denser texture, which is to be expected with ingredients like cottage cheese and oats. But don’t let that deter you! They’re still delicious, and my kids gobbled them up without a second thought. The slight difference in texture is a small trade-off for the nutritional benefits they offer.

Nonstick Double Burner Griddle

I love my Caraway pans because they are non-stick and non toxic. Great for making big batches of pancakes!

A Family Favorite

Even though my husband pointed out that they’re not quite like the pancakes he grew up with, he still gave them a thumbs up. And with the kids asking for seconds, I’d say these Oatmeal Cottage Cheese Pancakes are a win. They’re a healthier option that doesn’t sacrifice taste, making them a new staple in our breakfast rotation.

So, if you’re looking for a breakfast that’s as good for you as it is tasty, give these Oatmeal Cottage Cheese Pancakes a try. They might just become a favorite in your house, too!

Equipment

  • 1 Blender

Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup rolled oats
  • 1/2 cup gluten free flour All Purpose works as well
  • 1 tsp vanilla extract
  • 1 tbsp honey or maple syrup optional for sweetness
  • 1 tsp baking powder
  • A pinch of salt
  • Butter or oil for cooking

Instructions

Blend the Ingredients:

  • Add the cottage cheese, eggs, oats, flour, vanilla extract, honey or maple syrup (if using), baking powder, and salt to a blender.
  • Blend on high until the mixture is smooth and creamy, about 1-2 minutes. The batter will be thick, but still pourable.

Heat the Pan:

  • Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

Cook the Pancakes:

  • Pour the batter straight from the blender onto the hot skillet, using about 1/4 cup of batter for each pancake. Spread slightly if needed, as the batter is thick.
  • Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes. Flip and cook the other side until golden brown, another 2-3 minutes.

Serve:

  • Serve warm with your favorite toppings like fresh fruit, yogurt, syrup, or a sprinkle of nuts.

Notes

  • If you prefer thinner pancakes, add a little more milk to the batter until it reaches your desired consistency.
  • For a fun twist, try adding blueberries or chocolate chips to the batter before cooking.
